Working from home has its perks, but when it comes to lunchtime, it's easy to find yourself staring at a refrigerator and making unhealthy lunch decisions. These ideas for meal prep lunches are so easy, healthy, and affordable. The best part, you can make them all in about 20 minutes and you're good for the week.
Turkey is a low-calorie protein for lunch
When it comes to healthy lunch meal prep, ground turkey is my top choice. It's a lean protein source, meaning it's lower in fat compared to other meats like beef or pork, making it an excellent option for those looking to reduce their calorie intake and promote weight management.
Ground chicken is also a great option but in my opinion, ground turkey has more flavor.
Choose rice as a healthy side option
All of these lunch prep recipes are served with a side of rice. Choosing rice instead of pasta or bread offers several benefits. Firstly, rice is typically easier to digest, leading to a lighter and more comfortable feeling after a meal.
Compared to pasta or bread, rice is often less processed, particularly when choosing whole grain varieties. This means that rice retains more of its natural nutrients such as fiber, vitamins, and minerals, which are essential for maintaining overall health and supporting a happy digestive system.
3 Easy Meal Prep Turkey Lunch
Turkey and Mixed Vegetables

This recipe is so easy and my go-to when I don't feel like being creative. I usually have a bag or two of frozen mixed veggies in my freezer and this one-pan meal will have your lunches for the week prepped in less than 20 minutes.
Ingredients
Ground Turkey
Olive oil
Mixed frozen veggies
Favorite spices
Vegetable broth
Instructions
Heat your pan to a medium-high setting
Add just enough oil to coat the bottom of the pan
Brown the ground turkey with salt, pepper and your favorite seasonings
Add frozen veggie mix and a 1/2 cup of vegetable broth
Let it cook for a few minutes until all liquid is absorbed
Portion this into 4 servings with a quarter cup of cooked rice and let it cool before adding them to the refrigerator.
Turkey Taco Bowl

This turkey taco bowl can be served with a side of rice or on a small tortilla, like a burrito. Add some extra toppings like salsa, avocado, or chopped onions.
Ingredients
Ground Turkey
Olive oil
Frozen (or canned) corn
Taco seasoning
Vegetable broth
Instructions
Heat your pan to a medium-high setting
Add just enough oil to coat the bottom of the pan
Brown the ground turkey with some salt and pepper
Mix in the corn, taco seasoning and a 1/2 cup of vegetable broth
Let it cook for a few minutes until all liquid is absorbed
Turkey Cabbage Roll Bowl

This is one of my favorites and I actually make a crockpot version of this with ground beef for the family at least once a month.
Ingredients
Ground Turkey
Olive oil
Half a head of cabbage chopped
1/2 bag of shredded carrots
1 can of tomato sauce
Salt, pepper, Italian seasoning
Instructions
Heat your pan to a medium-high setting
Add just enough oil to coat the bottom of the pan
Brown the ground turkey with some salt and pepper
Stir in the can of tomato sauce, carrots and chopped cabbage, and Italian seasoning until well mixed
Cover the pan a let it simmer for about 15 minutes or until the cabbage and carrots are soft
Tips
In my opinion, Turkey needs a lot of help with seasoning. Taste as you cook and add more seasoning until you've reached your preferred taste.
